Cauliflower, Broccoli, Green Beans, Onion, Green Tomatoes, Peppers, Cucumber, Courgette, Carrots, Celery, Mustard, Wheat Flour, Turmeric, Vinegar, Chillies, Sugar

A selection of fresh garden vegetables that have been salted (preserved) overnight, then washed & drained, blanched and added to a sauce made up of cider vinegar, sugar, mustard powder and turmeric (which is why it's bright yellow!). The big challenge is getting the right flavour and consistency of the sauce mix.

 

It’s great with cold cuts, pork pie etc.

BEETROOT & HORSERADISH RELISH

Beetroot, Apples, Horseradish, Onions, Root Ginger, Garlic, Orange Zest, Lemon Juice, Apple Cider & Balsamic Vinegar,  Sugar

The natural sweetness of the beetroot is still very evident and is not overpowered by the spices and vinegar. Delicious with Salmon (cooked any way or smoked), Cold Cuts and (top tip) Steak or Roast Beef!

WILD DAMSON & APPLE JELLY

Wild Damsons, Apples, Lemon Juice, Sugar

 

My good friend Rex Caplan brought me a large box of Wild Damsons, picked from the Hedgerows of his land, which is over 1,000 ft above sea level. The depth of flavour is amazing. Use as you would Redcurrant Jelly - with Lamb, Cheese, or a big spoonful to sweeten your gravy

APRICOT & GOOSEBERRY JAM

Fresh Apricots, Gooseberries, Sugar

 

Our first successful year of picking the apricots before the squirrels got to them. Well known for being a difficult fruit to set, we mixed in some "high Pectin" Gooseberries. We are very excited by the resulting flavour and consistency.
