SEVILLE ORANGE MARMALADE
Seville Oranges, Seville Orange Gin & Sugar.
In January, when Seville Oranges arrive on our shores, we make our Orange Gin using the zest of dozens of Oranges, which we add to good quality London Gin. We then freeze the pulp until we take the Gin off the zest, which is around 6/7 months later. The Gin-infused zest is then added to the pulp to make a "grown up" marmalade with dark soft sugar.

Freshly picked Raspberries, a little natural Pectin, Sugar, Butter (trace – approx. 1/40,000).
The perfect Jam (if you don’t mind the seeds). Great in cakes too.

APRICOT & GOOSEBERRY JAM
Fresh Apricots, Gooseberries, Redcurrant Juice, Sugar.
Our first successful year of picking the apricots before the squirrels got to them. Well known for being a difficult fruit to set, we mixed in some "high Pectin" Gooseberries. We are very excited by the resulting flavour and consistency

WILD DAMSON & APPLE JELLY
Wild Damsons, Apples, Lemon Juice, Sugar.
My good friend Rex Caplan brought me a large box of Wild Damsons picked from the Hedgerows of his land at over 1,000 ft above sea level. The depth of flavour is amazing. Use as you would Redcurrant Jelly. With Lamb, Cheese, or a big spoonful to sweeten your gravy.
